The Persistence seem to be more story centric, and obviously has a more gritty/realistic art-style. I can't say for sure though, because I've only watched a single gameplay review so far. Overall, it does seem to be a bit more action than stealth.
At first I wasn't so sure about the cartoony art-style, but after watching some gameplay it has really grown on me.

Void Bastards definitely has less story, but it also seems to have more gameplay depth with the character traits, full ships randomized with hazards, locking doors to block the enemy, ect.
They both have good reviews too, so I'm really having trouble deciding on which one to go with. I love games like Prey (2017) and Alien: Isolation, and I really like the general idea of fusing roguelite/like elements with Sci-Fi. Both are on Nintendo Switch for $37.79 CAD and they both seem to be right up my alley.
